About

Pre-gelatinised unmalted barley flakes — the classic Irish dry stout adjunct. Unlike flaked wheat or oats, which add softness, flaked barley adds a dry, distinctly raw and grainy mouthfeel along with body and much-improved head retention. It is what gives a Guinness-style dry stout its characteristic dry, grainy edge.

Usage

Add directly to the mash with a diastatic base malt; no cereal cooking needed. Typical 5–20%, with 10–15% classic for Irish dry stout. Pairs with roasted barley over an English ale base; also used in oatmeal stouts and robust porters for body.
